As an adventurous connoisseur of Spanish cuisine, he enjoys creating immersive stories with uncommon products, which rings true as one of his favorite ingredients to incorporate into his dishes is octopus. "Our cuisine at Ysidora is harmonious with Spanish cuisine, which is why the octopus must be at the center," says Chef Obregon. "When preparing the octopus, we want the flavors of the sea to come out, so we massage the octopus with water and salt to mimic the ocean water. Then, we cook the dish for 45 minutes in water and spices. Next, the octopus is grilled and caramelized by the grill's charcoal. We finish the dish off with chickpeas al pibil, Spanish chorizo and top with our signature Reverence olive oil for added flavor."
